- Set aside about 1/6 of the shortcrust pastry and roll out the remaining so that it is slightly larger than the tray.
- Place rolled shortcrust pastry in a baking mold and arrange the border along those of the mold, so that the pastry can contain jam.
- Pour the jam in the shortcrust pastry “container” you just created and spread it with a spoon.
- Use the pastry you set aside to create rolls and place them in a criss-cross pattern all over the surface.
- Preheat the oven to 180 °C.
- Cook in the oven for about 45 minutes.
- Let the cake cool down to room temperature before removing from the mold, otherwise it will easily break.
