Potato purée

Purée may be used as a main course, or as a side dish: for example, it is very good with beans. Ingredients below ar calculated for the main course, they should be halved for the side dish.

  1. Peel the potatoes and cut them to small pieces. The smaller, the faster to cook.
  2. Put them in a pot and cover with water.
  3. Bring to boil and cook until potatoes are soft.
  4. Drain and mash with a fork.
  5. Warm up milk, but don’t let it boil.
  6. Still on the fire, add butter and mashed potatoes, and optionally grated cheese, and stir until uniform.
  7. Keep stirring on the fire to thicken as you like.
